Patties from the muffin tin à la onion cake

Ingredients for 1 servings:

  • 1 portion of dough (basic recipe for pie or quiche dough), from the DB
  • 600 g onion(s), diced
  • 150 g red bell pepper(s), diced
  • 200 g feta cheese, crumbled
  • 1 tbsp fresh herbs, e.g. thyme, marjoram
  • 2 tbsp oil for frying
  • 2 eggs
  • 75 g sour cream
  • 125 ml cream

Instructions

Working time approx. 30 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 45 minutes

Prepare the dough according to the ‘Basic Pie Dough or Quiche Dough Recipe’ and let it rest in the refrigerator. The recipe is listed under my recipes in the database. Dice the onions and bell peppers and chop the herbs. Heat the oil in a large pan and sauté the onions for about 7-8 minutes. Add the bell peppers and herbs, season with salt and pepper, and sauté for about 5 minutes. Let cool. Crumble the feta and mix into the cooled mixture. Mix the eggs, sour cream, and cream until smooth. Roll out the dough, cut out circles, stretch them to size by hand, and line prepared muffin tins with them. Divide the onion mixture among the cups and spoon 1-2 tablespoons of the glaze over each one. Bake in a preheated oven at 220°C (top/bottom heat) for about 20-30 minutes, until the glaze has set and the muffins are lightly browned. Makes about 20 patties. How many you make depends on the size of your muffin tins. The pies are delicious both hot and cold.
