Patties or fritters made from beans, oat flakes and quark

Ingredients for 2 servings:

  • 1 can kidney beans
  • 5 tbsp oat flakes
  • 3 tbsp low-fat curd cheese
  • 2 tbsp semolina
  • 1 egg(s)
  • salt and pepper
  • Vegetable broth, granulated
  • Mustard
  • olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Rinse the kidney beans and mash them well with a fork in a bowl. Add the oats, quark, semolina, egg, and seasonings, if desired, stir, and let stand for about 20 minutes. Heat olive oil (any other vegetable oil will do, of course) in a pan and either pre-form patties of the desired size or simply place small mounds of the mixture in the pan and flatten them. Fry the patties until golden brown on both sides. These delicious vegetarian patties are quick and easy to prepare and taste great with a green salad, a fried egg, or simply with a cream cheese dip or something similar. A great snack for lunch or dinner.
