Ingredients for 4 servings:

  • 300 g flour
  • 5 dl milk mixed with water
  • 1 tsp salt
  • 3 eggs
  • 2 pinches of baking powder
  • 12 slice(s) of bread(s), 2-4 days old
  • 6 egg yolks
  • 4 dl white wine
  • 1 dl water
  • 6 tbsp, levelled sugar
  • 2 dl rapeseed oil

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Old Swiss farmer’s recipe from my grandmother

Mix flour, baking powder, milk, water, 3 eggs, and 1 teaspoon of salt to form a thick omelet batter. Heat rapeseed oil in a pan. Coat the bread slices in the batter and fry in the oil for about 1 minute per side. Keep warm in a shallow ovenproof dish. For the sauce, bring the egg yolks, sugar, and white wine to a frothy boil, pour over the slices, and let stand for about 10 minutes. Serve with a piece of Alpine cheese.
