Pazzolinchen's world's best bean salad

Ingredients for 5 servings:

  • 800 g bush beans
  • 1 large vegetable onion(s) or 2 red onions
  • 2 large tomatoes
  • 125 g bacon cubes
  • 4 tbsp olive oil
  • 4 tbsp white balsamic vinegar
  • 1 tbsp, heaped crème fraîche
  • salt and pepper
  • possibly milk
  • Chicken broth powder
  • Maggi
  • n. B. Sweetener

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Trim the ends of the beans and cut them into 4-5 cm long pieces. Cook for about 15 minutes. They may be a little softer. In the meantime, chop the tomatoes and onions into small pieces and fry the bacon cubes until crispy. Combine the olive oil, vinegar, oil, and crème fraîche and season with salt, pepper, chicken stock powder, and Maggi. If the sauce is too thick, add a little milk. If necessary, sweeten the sauce to make it a little milder. Finally, pour cold water over the cooked beans, drain well, and mix with the onions, tomatoes, bacon, and sauce.
