Pea Noodle Soup
The perfect pea noodle soup recipe with a picture and simple step-by-step instructions.
- 150 g Dried peas
- 3 stem Celery
- 2 small Red pointed peppers
- 2 Carrots
- 1 Onion
- 1 Clove of garlic
- 750 ml Meat broth with some meat from my supply
- 100 g Kritharki – small Greek noodles
- 1 teaspoon Thyme
- Soak the peas in water overnight and cook in the soaking water for about 1 hour the next day.
- Peel the onion and garlic, cut into small cubes and sauté in a saucepan with hot oil.
- Clean the celery, remove the seeds from the peppers, peel the carrots, cut everything into small pieces and add to the onion and garlic mixture and sauté
- Now pour in the stock, bring to the boil and cook for about 10 minutes. Chop the meat and add.
- In the meantime, cook the pasta.
- Add the peas with the cooking water, drained noodles and the thyme to the vegetables and simmer for another 5 minutes.
