Pea Noodle Soup

The perfect pea noodle soup recipe with a picture and simple step-by-step instructions.

  • 150 g Dried peas
  • 3 stem Celery
  • 2 small Red pointed peppers
  • 2 Carrots
  • 1 Onion
  • 1 Clove of garlic
  • 750 ml Meat broth with some meat from my supply
  • 100 g Kritharki – small Greek noodles
  • 1 teaspoon Thyme
  1. Soak the peas in water overnight and cook in the soaking water for about 1 hour the next day.
  2. Peel the onion and garlic, cut into small cubes and sauté in a saucepan with hot oil.
  3. Clean the celery, remove the seeds from the peppers, peel the carrots, cut everything into small pieces and add to the onion and garlic mixture and sauté
  4. Now pour in the stock, bring to the boil and cook for about 10 minutes. Chop the meat and add.
  5. In the meantime, cook the pasta.
  6. Add the peas with the cooking water, drained noodles and the thyme to the vegetables and simmer for another 5 minutes.
  7. Put the pea soup on a plate and enjoy – Bon appetit; 🙂
