Pea tortellini salad

Ingredients for 4 servings:

  • 400 g tortellini with cheese filling
  • salt water
  • 150 g peas, fresh or frozen
  • 1 onion(s)
  • 2 spring onions
  • 1 red bell pepper(s)
  • 150g salami
  • 100 ml vegetable stock
  • 75 ml white balsamic vinegar
  • salt and pepper
  • 1 tbsp honey
  • 75 ml olive oil
  • 1 box of cress

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the tortellini in salted water according to the package instructions until al dente. Add the peas and cook for about 3 minutes. Drain both, rinse, and drain. Peel and finely dice the onion. Rinse and trim the spring onions and slice into rings. Rinse and trim the bell peppers and slice finely. Cut the salami into strips. Carefully mix the tortellini with the prepared ingredients. Season with broth, vinegar, salt, pepper, and honey. Stir in the oil. Let stand for about 20 minutes. Serve and sprinkle with finely chopped cress.
