Peach Blueberry Cobbler

Ingredients for 4 servings:

  • 2 peaches, ripe
  • 100 g blueberries
  • 75 g butter, soft
  • 75 g sugar
  • 1 small egg(s)
  • 80 g flour
  • 1 tsp baking powder
  • ¼ tsp cinnamon
  • 75 ml milk

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 200°C and thoroughly grease four ovenproof baking dishes with butter. Wash, quarter, and pit the peaches. Cut the peach quarters into thin wedges. Carefully rinse the blueberries under lukewarm water, let them drain, and remove any damaged or spoiled berries. Mix the blueberries and peaches. Divide the fruit evenly between the baking dishes. Mix the butter with the sugar until the sugar has dissolved and the butter is light and creamy. Then stir in the egg (without the shell). Mix the flour with the baking powder and cinnamon. Stir the flour, baking powder, and cinnamon mixture into the butter alternately with the milk. Then spread the batter over the fruit. Place the baking dishes in the oven and bake at 180°C (fan oven) for about 35 minutes until golden brown. Garnish with a scoop of vanilla ice cream before serving. This recipe can be modified by using nectarines or sour apples instead of peaches.
