Peach Bulgur Salad

The perfect peach bulgur salad recipe with a picture and simple step-by-step instructions.

  • 1 Cup Fine bulgur
  • 2 Ripe peaches
  • 1 green Chilli pepper
  • 4 Spring onions
  • 0,5 bunch Leaf parsley
  • 0,5 bunch Coriander
  • 1 handful Moroccan mint leaves
  • Olive oil
  • Lemon juice, freshly squeezed
  • Salt
  • Pepper
  1. Put the cup with bulgur in a bowl, pour two cups of hot water over the bulgur, swell and allow to cool.
  2. Halve, stone and dice the peaches and add to the cooled bulgur. Core and finely chop the chilli pepper, cut the spring onions into fine rolls and also pour over the bulgur.
  3. Finely chop the coriander, parsley and mint and also add to the bulgur and mix everything well. Season with salt and pepper and season with olive oil and lemon juice.
  4. It hardly gets any easier, but it is really tasty in summer.
