Peach Crumble with Cinnamon Sprinkles

  • 100 g Wheat flour type 405 or 550
  • 1 pinch Baking powder
  • 50 g Sugar
  • 1 packet Vanilla sugar
  • 0,5 tsp Cinammon
  • 1 pinch Salt
  • 1 Egg yolk size M
  • 50 g Butter
  • 4 Ripe peaches
  • Icing sugar for dusting
  • 2 tbsp Rum or orange liqueur, alternatively orange juice
  • 4 tbsp Brown sugar
  • 125 g Fresh raspberries
  • 4 Bullets Vanilla icecream
  1. For the crumble, put the flour, baking powder, sugar, vanilla sugar, cinnamon, salt, egg yolk and melted butter in a large mixing bowl. Only then use the dough hook of the hand mixer to make sprinkles with your hands, then put in a cool place.
  2. Wash, core and cut the peaches into pieces. Drizzle with rum, orange juice or liqueur and leave to marinate for about 30 minutes. Preheat the oven to 200 ° C (convection: 175 ° C).
  3. Spread the portion molds with butter. Spread the prepared peaches in it and spread the crumble on top.
  4. Bake the crumble in the preheated oven for 35-40 minutes until golden yellow. Cover with aluminum foil if necessary.
  5. Take the crumble out of the oven, let it cool down a bit and garnish with raspberries. Serve with a scoop of vanilla ice cream.
