Peach Crumble with Cinnamon Sprinkles

- 100 g Wheat flour type 405 or 550
- 1 pinch Baking powder
- 50 g Sugar
- 1 packet Vanilla sugar
- 0,5 tsp Cinammon
- 1 pinch Salt
- 1 Egg yolk size M
- 50 g Butter
- 4 Ripe peaches
- Icing sugar for dusting
- 2 tbsp Rum or orange liqueur, alternatively orange juice
- 4 tbsp Brown sugar
- 125 g Fresh raspberries
- 4 Bullets Vanilla icecream
- For the crumble, put the flour, baking powder, sugar, vanilla sugar, cinnamon, salt, egg yolk and melted butter in a large mixing bowl. Only then use the dough hook of the hand mixer to make sprinkles with your hands, then put in a cool place.
- Wash, core and cut the peaches into pieces. Drizzle with rum, orange juice or liqueur and leave to marinate for about 30 minutes. Preheat the oven to 200 ° C (convection: 175 ° C).
- Spread the portion molds with butter. Spread the prepared peaches in it and spread the crumble on top.
- Bake the crumble in the preheated oven for 35-40 minutes until golden yellow. Cover with aluminum foil if necessary.
- Take the crumble out of the oven, let it cool down a bit and garnish with raspberries. Serve with a scoop of vanilla ice cream.
