Peach gratin with pork fillet

Ingredients for 4 servings:

  • 750 g pork fillet(s)
  • 30 g clarified butter
  • 2 large cans of peach(s), halved
  • 125 g cheese (Gouda), grated
  • 200 g crème fraîche
  • 1 egg(s)
  • 1 tbsp sauce thickener
  • 1 tbsp marjoram
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the pork fillet into strips, fry in clarified butter, season well, and place in a baking dish. Place the drained peaches on top of the meat. Whisk 3 tablespoons of crème fraîche with the egg, bring 1/8 cup of peach juice to a boil with the remaining crème fraîche. Add the sauce thickener. Season with marjoram. Finally, stir in the beaten egg and 2/3 of the cheese. Pour over the peaches and sprinkle with the remaining cheese. Bake at 200°C for about 15-20 minutes. Serve with rice or bread.
