Peach Tart

Ingredients for 1 servings:

  • 195 g flour
  • ½ tsp sugar
  • 115 g butter (soft)
  • 2 tbsp sour cream
  • 5 m.-sized peach(s)
  • 3 large eggs, the yolks
  • 165 g sour cream
  • 155 g sugar
  • 35 g flour
  • 150 g jam (peach)
  • 1 tbsp orange juice

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 180°C and line a 26cm tart tin, but do not grease it. Put the flour in a bowl and knead it with the softened butter and sour cream to form a dough. Roll out the dough and line the tin with it, including the edges and set aside. Halve the peaches, remove the stones, and cut them into not-too-thin slices. Then line the bottom of the tin in a spiral pattern, ensuring the slices overlap. Mix the egg yolks with the sour cream, sugar, and flour. Spread evenly over the peaches and bake the tart for about 1 hour in the preheated oven. The dough should be golden brown and the filling should be firm in the center. If necessary, cover with aluminum foil to prevent it from overcooking. Then remove from the oven and place on a wire rack. For the glaze, put the peach jam and orange juice in a small saucepan. Mix, heat, and immediately pour over the tart. Spread evenly with a brush. It tastes great warm, chilled, or cold from the fridge. It looks even more delicious served with a dollop of cream on top.
