Peach – Citrus – Jam

Ingredients for 1 servings:

  • ½ large orange(s), zest and juice
  • ½ large lemon(s), zest and juice
  • 1,500 g peach(s)
  • 850 g sugar

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Place the zest and juice of half an orange and half a lemon into a large saucepan. Halve the peaches, remove the stones, and chop them into small pieces, then place them in a blender. Puree until smooth, working in two batches if necessary. Add the peach puree and sugar to the saucepan and bring to a boil while stirring. Then simmer for about 45-60 minutes, stirring frequently. It’s best to test for settling at this point; the jam will then have the color of honey. Pour into sterilized jars while still hot and seal. This makes 7 jars of 250ml each.
