Peaches filled with amaretti

Ingredients for 4 servings:

  • 4 peach(s), ripe
  • 60 g biscuit(s), amaretti (pastry)
  • 50 g sugar
  • 40 g almonds, peeled
  • 30 g butter
  • 70 g wine, muscat wine, sherry or port wine
  • 1 egg yolk
  • 1 tsp cocoa powder

Halve the peaches and remove the stones. Carefully scoop out a little more flesh with a teaspoon to create a nice, round opening and set it aside. Drizzle the peach halves with a little lemon juice. Finely crumble the amaretti biscuits and finely chop the almonds. In a bowl, mix the almonds, amaretti biscuits, 20g of sugar, the cocoa powder, the egg yolk, and the peach flesh well. Fill the peach halves with the mixture. Preheat the oven to 200°C. Butter a baking dish and place the peach halves in it, filling side up. Sprinkle with the remaining sugar and drizzle with the wine, port, or sherry. Place in the oven and bake for 35 minutes, drizzling occasionally with any liquid that runs over them. They can be served directly from the baking dish.
