Peanut butter and jam muffins

Ingredients for 1 servings:

  • 190 g flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 90 g sugar
  • 60 ml vegetable oil
  • 130 g peanut butter
  • 240 g buttermilk
  • 90 g jelly or jam of your choice

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 180°C. Grease a muffin tin or line it with paper baking cups. In a medium bowl, combine the flour, baking powder, and baking soda. Break the egg, whisk lightly, and add it. Then combine the sugar, oil, peanut butter, and buttermilk. Fill half of the batter into the muffin tin. Place 1 teaspoon of jam or jelly into each hole and fill with the remaining batter. Sprinkle with chopped peanuts. Bake in the hot oven on the middle rack for about 20-25 minutes.
