Peas with onions and Parmesan

Ingredients for 4 servings:

  • 1 kg peas, frozen
  • 100 ml olive oil
  • 4 onions, finely chopped
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp broth
  • ¼ liter of water
  • 200 g Parmesan, grated
  • 2 eggs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Heat the olive oil, add the peas, and cook for about 10 minutes. Then add the diced onions and fry, stirring, until the onions are translucent. Add the water and stock and simmer for another 10-15 minutes. Crack the eggs, stir in the grated Parmesan cheese, and season generously with salt and pepper. Mix the mixture with the peas and simmer for another 5-10 minutes, stirring. Tastes great with Italian roulades and baguette.
