Ingredients for 40 servings:
- 320 g flour
- 160 g butter
- 2 tbsp sugar
- 2 egg yolks
- 1 pinch of salt
- 225 g butter, soft
- 125 g honey
- 60 g sugar
- 200 g brown sugar
- 60 ml whipped cream
- 450 g nuts (pecans), coarsely chopped

not just a Christmas pastry
Make a shortcrust pastry from the first five ingredients and chill it. Then roll it out on a floured surface to approximately 25 x 40 cm; the dough should be about 1/2 cm thick. Use a pull-out baking sheet or a double layer of aluminum foil to secure the dough. Prick it several times with a fork and pre-bake at 180°C for 15 minutes. Meanwhile, combine the butter, honey, sugar, and brown sugar. Simmer over medium heat for 5 minutes, stirring constantly, until the mixture turns golden brown. Remove from the heat, stir in the cream, and mix in the nuts. Spread the mixture over the crust and bake for another 15 minutes at 200°C. Make sure the mixture doesn’t get too dark. Once cooled, cut into 1.5 x 3 cm strips or 2.5 cm cubes. Use a very sharp knife, or even an electric knife. Since pecans are quite expensive in Germany, I can imagine these strips would also taste very good with walnuts. I haven’t tried it yet, but a hint of orange peel also goes very well in these nut slices.
