Peeled Ribs with Mashed Potatoes & Leek Vegetables

Ingredients
 

Ribs:

  • 400 g Smoked ribs
  • 1 toe Garlic
  • 3 Pc. Juniper berries
  • 3 Pc. Cloves
  • 3 Pc. Allspice grains
  • 1 tsp Caraway seed
  • 1 tsp Peppercorns
  • 2 Pc. Bay leaves
  • 1 tsp Salt
  • 1 Pc. Mace

Leek vegetables:

  • 1 Leeks
  • 2 tbsp Butter
  • 1 tbsp Flour
  • 100 ml Cream
  • Salt and pepper
  • Freshly grated nutmeg

Mashed potatoes:

  • 500 g Potatoes
  • 200 ml Milk warm
  • 4 tbsp Butter
  • Salt and pepper
  • Freshly grated nutmeg
  • Seasoned salt

Instructions
 

Ribs:

  • 1st ribs with 5 liters of salted water, bay leaves, allspice, juniper, caraway seeds, cloves, mace, garlic, peeled and slice in a pressure cooker, cover with the lid and cook for 20 minutes. In a normal pot this takes 1 hour to 5 hours. Depending on the softness you want! Then I parked the ribs in the brew in the oven because I needed the pressure cooker! 🙂 But that's not a problem!

Mashed potatoes: Preheat the oven to 50 degrees!

  • Place the milk in the oven to warm up. Peel the potatoes and cut them into large pieces and place them in the pressure cooker. Add water according to the drainage and cook for 5 minutes! Different depending on the pot! Of course it is done in the traditional way! 🙂

Leek vegetables:

  • In the meantime, clean the leek, cut into 1.5 cm thick slices and rinse with cold water. Heat the butter in a saucepan until it is lightly brown, then add the leek and fry in it for 5 minutes. Then dust with flour, sizzle briefly and deglaze with cream. Briefly bring to the boil. Switch back and season with salt, pepper and nutmeg. Keep warm in the oven. To put plates!

Mashed potatoes:

  • Strain the potatoes and add milk with butter, coarsely mash everything, if you like fine too 🙂 Season with salt, pepper, seasoned salt and nutmeg.

Ribs:

  • Take the ribs out of the brew and if it went well you can now pull out the bones! 🙂 Cut the meat into thin slices and spread on the warm plates with the leek vegetables and mashed potatoes, serve! 🙂
