Ingredients for 4 servings:

  • 500g penne
  • 250 g mascarpone
  • 200 g cocktail tomatoes
  • 150 g bacon cubes or ham cubes
  • 100 ml water
  • salt and pepper
  • Cayenne pepper, if desired
  • Parmesan, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Boil water in a large pot and cook the penne according to the package instructions. At the same time, fry the bacon cubes. Quarter the tomatoes and add half of the tomato pieces to the bacon and simmer for about five minutes. Then deglaze with the water and bring to a boil. Add salt and pepper. Gradually add the mascarpone and mix. Heat the sauce gently; do not boil, otherwise the fat in the mascarpone will dissolve and the sauce will turn into an unsightly mush. Drain the pasta as soon as it is al dente. Then stir the remaining half of the tomatoes into the sauce. Season with salt, pepper, and cayenne pepper, if desired. Sprinkle with Parmesan cheese at the end.
