Ingredients for 4 servings:
- 2 tbsp olive oil
- 450 g chicken breast fillet(s), cut into thin strips.
- 1 bunch of spring onions, cut into fine rings
- 250 g feta cheese, finely diced
- 4 tbsp chives, freshly chopped
- salt and pepper
- 500g penne
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Heat olive oil in a pan, add the chicken, and stir-fry until golden brown and cooked through. Add the spring onions and cook for 2 minutes. Stir in the feta and half of the chives, and season with salt and pepper. Meanwhile, cook the pasta in a large pot of lightly salted water until al dente. Drain and transfer to a warmed bowl. Spoon the meat mixture over the pasta. Garnish with the remaining chives and serve immediately.
