Stuffed zucchini

Ingredients for 4 servings:

  • 5 zucchini
  • 500 g minced meat
  • 1 onion(s)
  • 1 bunch of mixed herbs or just parsley
  • Cheese (Emmental), grated
  • salt and pepper
  • Olive oil, for the mold

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

With minced meat and herbs

Wash the zucchini, halve it lengthwise, and hollow out the flesh. Finely chop the zucchini flesh, herbs, and onion, and mix with the minced meat. Season with salt and pepper. Fill the zucchini halves with the filling, sprinkle with Emmental cheese, and place in a baking dish greased with olive oil. Cook in a preheated oven at approximately 180°C for 20 minutes. Tip: My herb mix usually consists of whatever is growing in the garden. We like a mix of parsley, ground elder, coriander, and tarragon. It’s also delicious with wild garlic.
