Ingredients for 4 servings:
- 1 jar dried tomatoes in oil (270 g)
- 500 g chicken breast fillet(s)
- 2 cloves garlic
- 125 ml cream
- 2 tbsp basil, fresh
- 400 g pasta
- 2 tbsp pine nuts, roasted
- Water
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook the pasta in salted water until al dente. Drain the tomatoes, reserving the oil and cut into thin strips. Heat the tomato oil in a wok and fry the sliced chicken breast fillet in batches. Return all the meat to the wok. Add the garlic, tomatoes, and cream. Simmer gently for 4-5 minutes. Stir in the sliced basil and pasta and heat through. Season with salt and pepper, sprinkle with toasted pine nuts, and serve.
