Ingredients for 4 servings:
- 600g penne
- 800 g cherry tomatoes
- 4 vanilla pods
- 3 tbsp balsamic vinegar
- olive oil
- Sea salt
- Pepper, freshly ground
- basil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Cook the pasta according to the package instructions until al dente. Wash the tomatoes, halve them, and fry them in plenty of olive oil. Halve the vanilla pods lengthwise, scrape out the seeds with a knife, and add them to the tomatoes along with the pods. Deglaze with balsamic vinegar and reduce slightly. Season with salt and pepper. Remove the pods. Toss the pasta with the tomatoes and serve. Sprinkle with sliced basil.
