Penne with salmon, zucchini and lemon

Ingredients for 4 servings:

  • 400 g penne (tube pasta)
  • 300 g salmon, fresh
  • 3 tbsp extra virgin olive oil
  • Salt and pepper, adM
  • 1 lemon(s), untreated
  • 300 g zucchini
  • 1 shallot(s)
  • chives

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely grate the lemon zest. Dice the salmon fillet. Clean and dice the zucchini. Chop the shallot and sauté in a pan with a little olive oil. Add the zucchini cubes and cover with 3 tablespoons of water. At the end of the cooking time, when the water has evaporated, add the salmon cubes and fry briefly. Season to taste with salt and pepper and a few squeezes of lemon juice. Meanwhile, cook the penne in plenty of salted water until al dente, drain, and toss with the sauce in the pan. Add the grated lemon zest and finely chopped chives and serve.
