Pepper-apple salad

Ingredients for 4 servings:

  • 3 bell pepper(s), red
  • 3 apples
  • 1 bunch of parsley
  • 2 tbsp lemon juice
  • 2 tbsp natural yogurt
  • 1 tsp horseradish
  • 1 tsp almond(s) (almond butter or nut butter)
  • 1 pinch of ginger
  • 1 pinch of cinnamon
  • 1 pinch of sea salt
  • 150 some honey
  • 150 g lamb’s lettuce

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Thinly slice the bell peppers and slice or slice the apples into thin sticks. Trim, wash, and dry the lamb’s lettuce thoroughly. Finely chop the parsley. Prepare a marinade from the remaining ingredients, mix it well with the bell peppers and apples, and let it marinate. Line a bowl with the lamb’s lettuce. Spread the bell pepper and apple mixture on top and sprinkle with the parsley. Serve.
