Ingredients for 1 servings:

  • 1 m.-large bell pepper(s), red
  • 1 m.-sized tomato(s)
  • 1 garlic clove(s)
  • 50 g pine nuts
  • 30 g Parmesan
  • 200 ml olive oil
  • 1 tsp salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Wash the peppers and tomatoes, deseed both, and chop them roughly. Peel the garlic. Sauté the peppers, tomatoes, and garlic in a little olive oil until softened. Roast the pine nuts in a nonstick pan without fat. Pour the contents of the pan into a bowl with the Parmesan cheese and pine nuts and blend. Season with salt and pepper to taste. If you don’t like it too spicy, start with just 1/2 teaspoon of salt and pepper. This amount made 500 ml for me.
