Ingredients for 3 servings:
- 3 bell peppers
- 1 onion(s)
- 2 garlic cloves
- 1 small can of chopped tomatoes (approx. 400 g)
- 125 ml vegetable stock
- 1 pack of tortellini
- 1 pack of feta cheese
- olive oil
- salt and pepper
- oregano
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Lightly fry the roughly diced bell peppers, finely chopped onion, and minced garlic in a pan and season generously with salt, pepper, and oregano. Add the tomatoes and broth and simmer for about 10 minutes. Meanwhile, cook the tortellini according to the instructions and then toss with the sauce. Transfer everything to a baking dish and sprinkle with the crumbled feta cheese. Bake for about 10 minutes at 200°C. Serve with baguette.
