Pepper zucchini salad

Ingredients for 6 servings:

  • 500 g bell pepper(s), red
  • 500 g zucchini
  • 1 large onion(s)
  • 3 tbsp vinegar
  • 1 tbsp oil
  • salt and pepper
  • chili powder
  • Mustard
  • Salad herbs

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

low-calorie, light raw vegetable salad

Wash and trim the peppers, removing the seeds and white pith. Wash the zucchini as well, but don’t peel it. Peel the onion and finely chop everything with a mandoline. Make a marinade from the other ingredients, pour it over the vegetables, mix well, and let it marinate for a few hours.
