Pepperoni Salad

Salad with rocket, tomatoes and Macedonian peppers.

4 servings


For the salad:

  • 100 g Macedonian peppers
  • 100 g vine tomato
  • some arugula
  • 2 tbsp olive oil, extra virgin
  • 2 tbsp balsamic vinegar
  • 100 g pine nuts


  1. Cut the Macedonian peppers into strips. Wash the tomatoes, remove the stalk, and cut them into cubes. Wash the rocket, spin it dry and tear it into small pieces.
  2. Mix the peppers, tomatoes, and rocket in a mixing bowl and season with olive oil and balsamic vinegar.
  3. Roast the pine nuts in a coated pan without adding fat until golden brown and arrange over the salad. Season the salad with salt and pepper and enjoy.
