Salad with rocket, tomatoes and Macedonian peppers.

Ingredients
For the salad:
- 100 g Macedonian peppers
- 100 g vine tomato
- some arugula
- 2 tbsp olive oil, extra virgin
- 2 tbsp balsamic vinegar
- 100 g pine nuts
Preparation
- Cut the Macedonian peppers into strips. Wash the tomatoes, remove the stalk, and cut them into cubes. Wash the rocket, spin it dry and tear it into small pieces.
- Mix the peppers, tomatoes, and rocket in a mixing bowl and season with olive oil and balsamic vinegar.
- Roast the pine nuts in a coated pan without adding fat until golden brown and arrange over the salad. Season the salad with salt and pepper and enjoy.
