Peppers as a quick vegetable side dish

Ingredients for 4 servings:

  • 4 bell peppers, color to taste
  • 1 chili pepper(s)
  • 100 ml olive oil
  • Sea salt, coarse

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Deseed the bell peppers and cut into roughly 2 x 2 cm cubes. Deseed the chili peppers and cut into fine strips. Heat the olive oil in a large non-stick pan to around 120ºC (careful not to burn them) and add the bell peppers. Fry over low heat for around 15-20 minutes, adding the chili after around 10 minutes, stirring occasionally. Finally, season with sea salt. The peppers should be lightly colored, but not brown. Tastes good warm as a vegetable side dish with fish, meat, etc. But also cold with baguette or something similar. If you like, you can peel the peppers beforehand with a vegetable peeler.
