Ingredients for 4 servings:

  • 2 partridges
  • Salt
  • 2 garlic cloves
  • 1 cup olive oil
  • 2 cup(s) white wine
  • 1 bunch of parsley
  • ½ cup meat broth
  • 1 tbsp cornstarch

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Roast partridge

Wash the partridges and halve them lengthwise. Rub them with salt and crushed garlic. Heat the oil and fry the partridges until golden brown. Using a tablespoon, remove almost all of the oil from the pan. Deglaze with wine, add chopped parsley, and stock. Cover and simmer until the meat is cooked through. Before serving, remove the meat from the pan and arrange it on a platter. Dissolve the cornstarch in a little water and add it to the boiling sauce. Stir constantly until thickened, then pour over the meat.
