Ingredients for 1 servings:

  • 500 g flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 packet of dry yeast
  • 4 tbsp olive oil
  • 250 ml water, lukewarm
  • 100 g green pesto, e.g. wild garlic or basil
  • 100 g feta cheese, alternatively Gouda or other hard cheese
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours

Mix the flour with salt, sugar, dry yeast, and oil, then add the lukewarm water. Knead everything into a dough, cover, and let rise in a warm place for about 45 minutes. Knead the dough again, shape into 18 small balls, and let rise for another 15 minutes. In the meantime, cut the cheese into 18 cubes. Fill each ball with a cube of cheese and roll in the pesto. Then arrange in a greased ring dish (26 cm springform pan with insert). Bake in a preheated oven at 180°C (top/bottom heat) for 25-30 minutes. Delicious with grilled food, salads, and antipasti, for example.
