Ingredients for 4 servings:

  • 4 tomatoes (vine tomatoes), peeled, roughly chopped
  • 2 spring onions, finely sliced ​​with as much green as possible
  • 3 garlic cloves, chopped
  • ½ bunch flat-leaf parsley
  • ½ bunch basil
  • ½ tsp salt
  • pepper
  • 50 g herb butter
  • 1 baguette(s) or ciabatta

Instructions

Melt the herb butter, sauté the garlic and spring onions for 2-3 minutes, deglaze with the tomato mixture, and simmer gently for about 10 minutes. Add the chopped parsley and basil, and season generously with salt and pepper. This can be easily prepared up to this point and stored in the refrigerator for 2-3 days or frozen. Preheat the oven to 200°C (400°F), cut the bread into approximately 2 cm thick slices, spread the mixture over them, and place them on a baking sheet. Bake in the oven for about 10 minutes, until the bread is crispy. We allow 3 slices per person.
