Ingredients for 1 servings:

  • 1 cup of quark (40% fat)
  • 1 cup crème fraîche with herbs
  • 1 cup sour cream
  • 10 small gherkins
  • 4 sprigs of parsley
  • 1 clove(s) garlic
  • salt and pepper
  • Sugar

Mix the quark, crème fraîche, and sour cream and let it drain. Then set it aside for now. Tip: I always do this using a clean tea towel, which I place in a sieve. Pour the quark into the sieve. If you’re in a hurry, put it in the tea towel and squeeze it dry. Drain the gherkins and cut them into small strips, also pat them dry. Rinse the parsley and chop it finely. Now put the quark mixture in a bowl and add the gherkins and parsley. Press in the garlic, stir well, and season with salt, pepper, and sugar. Serve with vegetables, crackers, or potatoes.
