Ingredients for 4 servings:

  • ½ cucumber(s)
  • 1 tsp salt
  • 1 tbsp rice vinegar
  • 1 tsp sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 10 minutes

Cut the cucumber into thin slices. Place the cucumber slices in a shallow bowl and sprinkle with 1 teaspoon of salt. Let stand for 5 minutes. Rinse the cucumber slices under running cold water and drain well. Mix the remaining salt, rice vinegar, and sugar in a large bowl. Add the cucumber slices and toss in the marinade. Refrigerate for 8 hours or overnight.
