Pickled salted herring

Ingredients for 4 servings:

  • 6 salted herring(s), if possible with milk or roe
  • 3 m.-sized onion(s)
  • 3 large cucumber(s), sour
  • 2 cups of sweet cream
  • 3 cups of yogurt
  • some fish seasoning
  • some vinegar

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes

also suitable as a “hangover breakfast”

Soak the salted herring for 12 hours. Change the water frequently during this time. Skin the herring and pour a little vinegar over them. Mix the cream and yogurt in a bowl. Stir in the roe or strained milk from the fish with the fish seasoning. Season the mixture with a little pickle juice, if desired. Cut the onions and pickled cucumbers into small strips and add to the sauce. Finally, let the herring fillets marinate in this sauce for at least 12 hours. Serve with floury boiled potatoes or simply a thick slice of fresh bread. A glass of strong Pinot Gris is also quite nice.
