Pickled Stinkerle (Harzer)

The perfect pickled stinkerle (harzer) recipe with a picture and simple step-by-step instructions.

to insert

  • 2 packet Harzer cheese
  • 4 Red Onions
  • 4 Red Red pepper
  • 4 Red Hot peppers

South

  • 125 ml Vinegar
  • 125 ml White wine or water
  • Salt
  • Pepper
  • 2 teaspoon Sugar
  • 6 tablespoon Oil
  • 8 Juniper berries
  • 1 teaspoon Colorful peppercorns
  • 4 Allspice grains
  • 1 Bay leaf
  1. Cut the cheese into pieces, peel the onion into thin slices.
  2. Wash, core and chop the bell peppers and chili peppers.
  3. Bring the vinegar and the white wine to the boil with salt, pepper and the spicy sugar.
  4. Now add the onion rings to the stock, let them steam slightly, remove from the stove and let them cool down.
  5. Put the cheese in a sealable container, add the oil, juniper berries, peppercorns, allspice and the bay leaf and pour the stock over it.
  6. Put the lid on the jar and let it steep in the refrigerator for at least 24 hours.
  7. Add some farmer’s bread and enjoy — Bon appetit; 🙂
