Ingredients for 4 servings:

  • 500 g tomatoes
  • 1 bunch of spring onions
  • 1 lime(s), organic
  • 1 bunch of coriander leaves
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

South American tomato salad / salsa

Dice the tomatoes, slice the spring onions into rings, finely chop the cilantro, and add everything to a bowl. Grate the lime zest over the top. Be careful, only the top layer, otherwise it will be bitter. Squeeze the lime and drizzle it over the vegetables along with the olive oil. Season with salt and pepper and let it sit for 30 minutes.
