Picos Silesian potato salad

Ingredients for 6 servings:

  • 1 ½ kg potatoes
  • 2 m.-sized apples (Granny)
  • ½ ring/s meat sausage with garlic
  • 6 m.-large pickled gherkins (dill pickles)
  • 6 m.-large gherkins
  • 3 large onions
  • 3 large salted herring, gutted and boned
  • 3 egg yolks
  • 1 jar mayonnaise
  • 6 tbsp oil
  • 3 tbsp vinegar
  • Salt
  • pepper

Instructions

Working time approx. 1 hour; Rest time approx. 12 hours; Total time approx. 13 hours

Boil the potatoes, then peel them. Soak the salted herring in water overnight. Dice all ingredients (including the potatoes), place them in a bowl, and mix together. Mix the mayonnaise with the oil, vinegar, and egg yolk and stir into the salad. Season with salt and pepper. Serve with Silesian white sausages.
