Winter apple and walnut cookies with white chocolate and cinnamon

Ingredients for 1 servings:

  • 200 g flour
  • ½ tsp baking powder
  • 1 pinch of salt
  • 90 g butter or margarine, soft
  • 120 g sugar, brown or white
  • 1 egg(s)
  • 1 packet of vanilla extract or vanilla sugar
  • 100 g walnuts
  • 100 g white chocolate
  • ½ apple
  • ½ tsp cinnamon powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

for about two baking trays, makes about 20 cookies

Preheat the oven to 175°C (top/bottom heat). Cream the butter or margarine and sugar in a bowl until fluffy. Add the egg and vanilla extract or vanilla sugar and beat until fluffy. Stir in the flour, baking powder, and salt. Roughly chop the walnuts and white chocolate. Core the apple half and cut into small cubes with an edge length of approximately 0.5 cm. Add the cinnamon powder to the batter and stir in (you can add a little more or less than directed; cinnamon is a matter of taste). Add the walnuts, chocolate, and apple pieces to the batter and stir in evenly. Take 1 tablespoon of batter and place in mounds on a baking sheet lined with baking paper. Press down lightly. Sprinkle with cinnamon, if desired. The cookies will spread a little, so leave a little space between the mounds. (I usually need two baking sheets for this amount.) Bake for approx. 15 minutes on the middle rack. Makes about 20 cookies.
