Pineapple bites

Ingredients for 2 servings:

  • 400 g pineapple
  • 8 slice(s) ham, Serrano-
  • 2 tbsp mayonnaise
  • 2 tbsp yogurt, whole milk
  • 2 tbsp chives, in rolls
  • 2 tbsp vinegar (white wine vinegar)
  • 4 tbsp water
  • 4 tbsp oil
  • 150 g lettuce (endive)
  • Sugar
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

as a starter

Cut the pineapple into 2.5 cm pieces. Halve the ham slices crosswise. Wrap each pineapple piece with a slice of ham and secure with a wooden skewer. Place the bites in an ovenproof dish and bake in a preheated oven at 220 degrees Celsius on the second rack from the bottom for about 15 minutes. For the dip: Mix the mayo with the yogurt and chives, then season with salt and pepper. For the salad: Mix the water, vinegar and oil. Season with a pinch of sugar, salt and pepper, and drizzle over the trimmed, striped lettuce.
