Pineapple Couscous

Ingredients for 4 servings:

  • 250 g couscous
  • 250 ml boiling water, lightly salted
  • 2 tomatoes
  • 1 tbsp curry powder
  • ½ onion(s)
  • 1 garlic clove(s)
  • 25 g butter
  • 2 tbsp peanut oil
  • 1 small can of pineapple pieces
  • salt and pepper
  • Ginger powder
  • Lemongrass powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

vegetarian, quick and easy

Place the couscous in a bowl and sprinkle with curry powder. Pour boiling water over it, just enough to cover. Let it stand for 5 minutes. Add the butter and peanut oil. After the soaking time, fluff the couscous with a fork. Finely dice the tomatoes, onion, and garlic and add them to the couscous along with the pineapple. Season to taste with the spices and, if desired, a little pineapple juice from the can.
