Pineapple-Mango Meat Stew

Ingredients for 4 servings:

  • 500 g beef, boneless
  • 1 onion(s)
  • 2 tbsp oil
  • 1 ½ tbsp curry powder
  • 1 tsp salt
  • ½ tsp black pepper, ground
  • 2 dl coconut milk
  • ½ dl desiccated coconut
  • 1 dl water
  • ¼ pineapple, fresh, chopped
  • 1 mango(s), chopped
  • ½ dl raisins

Cut the meat into small strips. Peel and dice the onion. Heat the oil in a saucepan over medium heat and fry the diced onion with the curry for 2 minutes. Add water (depending on how much sauce you want) and the meat, and mix well. Season with pepper and salt and simmer in a covered pan for 30-40 minutes, until the meat is tender (it may take longer depending on the type of meat used). Meanwhile, peel the pineapple and mango and cut into bite-sized pieces. Add the coconut milk, desiccated coconut, pineapple and mango pieces, and the raisins to the meat and simmer for about 5 minutes. Serve the dish with rice (I like basmati rice). Tip: This dish can also be prepared in advance for larger parties. However, it is important that the fresh fruit is added shortly before serving.
