Pineapple Muffins

The perfect pineapple muffins recipe with a picture and simple step-by-step instructions.

  • 50 g Butter
  • 1 Suck Egg
  • 1 packet Vanilla sugar
  • 1 tbsp Lemon juice
  • 120 g Flour
  • 5 tbsp Milk
  • 50 g Sugar
  • 2 cl Rum
  • 40 g Honey
  • 4 tbsp Pineapple from the can, chunky
  • 0,5 packet Baking powder
  1. Drain the pineapple and drizzle with honey and rum. Let it steep for about 1 hour. Grease the muffin tins.
  2. Preheat the oven to 175 degrees. Beat the butter until foamy, slowly add the egg, lemon juice, sugar and vanilla sugar. Mix the flour and baking powder and stir into the batter. Pour 2/3 of the batter into muffin molds, place the pineapple pieces on top and cover with the remaining batter. Bake on the middle rack for about 30 minutes.
