Ingredients for 1 servings:

  • 175 g candied pineapple
  • 100 g dark chocolate
  • 3 egg whites
  • 200 g sugar
  • 2 tbsp orange liqueur
  • 1 tsp lemon juice
  • 150 g almonds, ground
  • 40 wafers, each 4 cm in diameter

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Finely chop 125g of pineapple. Finely grate the chocolate. Beat the egg whites until stiff peaks form, gradually adding the sugar. Add the orange liqueur and lemon juice. Continue beating for about 10 minutes. Mix the ground almonds, chopped pineapple, and grated chocolate and fold in. Place wafers on a prepared baking sheet, dot the beaten egg white mixture on top. Arrange the remaining pineapple, cut into strips, on top. Bake in a preheated oven at 150°C (top/bottom heat) (gas mark 1) for about 20-25 minutes. Makes about 40 wafers (80 kcal each).
