Ingredients for 6 servings:
- 150 ml olive oil
- 4 tbsp lemon juice
- 1 tsp lemon zest, finely grated (organic)
- 50 g pistachios, salted
- 1 spring onion(s), finely chopped
- Salt
- pepper

Tarator bi fustuq with leaf salads or avocado
Finely grind or crush the pistachios. Mix together the olive oil and lemon juice. Stir in the spring onions, lemon zest, and pistachios. Season with salt and pepper. It pairs well with summer or winter leaf salads and sliced avocado. The dressing is very thick and should be poured over the salad just before serving. The dressing will keep in a screw-top jar in the refrigerator for up to 5 days.
