Ingredients for 2 servings:
- 300 g wheat flour type 550
- 1 packet of dry yeast
- 1 tsp salt
- 1 tbsp olive oil
- 200 ml wheat beer
- 2 tbsp turmeric
- 200 g Gouda in one piece
- ½ onion(s), red, large
- 6 mushrooms
- 1 ½ cans tuna, large
- 500 g minced beef
- 200g mozzarella
- Cheese, grated
- 2 eggs
- 1 can of whole tomatoes (small can)
- 1 ½ tsp sugar
- 1 tsp salt
- ½ tsp pepper
- 1 tsp oregano
- 1 tsp basil
- 1 tsp marjoram
- 1 tsp thyme
- 1 garlic clove(s)
- 250 g sour cream
- 50 g parsley
- 1 shallot(s)
- 1 garlic clove(s)
- 1 tsp salt
- 1 tsp sugar
- 50 g flour
- 150 g butter
Instructions
Working time approx. 1 hour; Rest time approx. 35 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 2 hours 10 minutes
Place the tomatoes in a saucepan and blend with a hand blender until they break up any small, coarse pieces. Finely dice the garlic clove and stir it into the tomato sauce along with the spices and sugar. Bring the tomato sauce to a boil over high heat, then cover and simmer for 10 minutes. Then let the sauce cool. Blend everything together with a hand blender until the mixture has liquefied. Then, in a small saucepan, make a roux and stir the contents of the pan with a wooden spoon. Let this sauce cool as well. Preheat the oven to 50°C. Thinly slice the onions and mushrooms. Drain the tuna thoroughly and squeeze out any excess water. Brown the ground beef with salt and pepper. Thinly slice the mozzarella. Thoroughly mix the flour with the yeast. Then add the remaining dough ingredients (turmeric is used to color the dough) and knead everything together with a hand mixer, first on the lowest setting and then on the highest setting, for 5 minutes until you have a smooth dough. Cover the mixing bowl with a towel and let the dough rise in the preheated oven for 35 minutes, until it has visibly increased in size. While the dough is rising, thoroughly grease a deep baking sheet with margarine (especially the high edges) and cut the Gouda cheese for the cheese crust into approximately 1-1.5 cm thick sticks. Once the dough is ready, preheat the oven to 200°C, sprinkle the dough with flour again, and knead briefly. Then place the dough in the center of the greased baking sheet and roll it out evenly on all sides to the edge. Once the dough is evenly distributed on the baking sheet, press the edge of the resulting square against the high sides of the baking sheet. Now place the cheese sticks along the edge and finally fold the raised dough over the cheese and press down lightly. Spread the tomato sauce on the pizza using a ladle from the pan. Now sprinkle a thin layer of grated cheese on top of the sauce. Then scatter the tuna evenly over the pizza. Repeat the same with the minced meat, mushrooms and red onions in the order mentioned. At this point, beat the egg in a bowl with a whisk and pour it over the center of the pizza. Now spread the sour cream in visually appealing and well-spaced blobs between the mushrooms. Finally, spread the mozzarella over the pizza and fill the gaps with grated cheese. If you like, pour some basil into the palm of your hand and season the pizza with it one last time. Bake the pizza for 30-35 minutes.
