Ingredients for 1 servings:

  • 1 package of pizza dough with olive oil, frozen, 260 g each
  • 1 m.-large eggplant(s)
  • 100 ml pizza sauce, spicy
  • 1 bunch of basil
  • 125 g buffalo mozzarella for sprinkling
  • some olive oil for frying
  • some oil (basil oil) for drizzling
  • some salt

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Cut the eggplant into approximately 12 slices, season with salt, and let stand for 30 minutes. Wash and dry the basil leaves, and set aside. Prepare a spicy pizza sauce or use a ready-made product. Wash and squeeze the eggplant slices dry. Fry the slices in olive oil until lightly browned, then drain on kitchen paper. First, spread the pizza sauce on the pizza base. Cover the pizza base with basil leaves. Place the eggplant slices on top and scatter the mozzarella over the sauce. Bake the pizza in a preheated oven at 200°C (top/bottom heat) for approximately 15 minutes. To serve, drizzle a few drops of basil oil on the baked pizza.
