Ingredients for 12 servings:

  • 3 cans of tomatoes
  • 3 bell peppers, yellow
  • 2 stalk(s) leeks
  • 750 ml vegetable stock
  • 540 g mushrooms
  • 250 g processed cheese
  • Salt
  • pepper
  • oregano
  • basil
  • 1 kg Frikadelle(n) (meatballs), fried

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Also suitable for vegetarians

Peel and dice the bell peppers. Peel and slice the leeks. Peel and slice the mushrooms. Sauté everything together in a suitable saucepan. Then pour in the pureed tomatoes and vegetable stock and bring to a boil. Finally, add the cream cheese and seasonings. For vegetarians, serve the meat separately; otherwise, the fried meatballs can be added to the soup.
