Pizza with ground elder, savoy cabbage and feta

Ingredients for 2 servings:

  • 1 roll(s) of pizza dough (refrigerated), possibly vegan
  • 2 bunch ground elder
  • 5 savoy cabbage leaves
  • 2 onions
  • 3 garlic cloves
  • 4 mushrooms
  • 100 ml sour cream or vegan alternative
  • 180 g feta cheese or vegan alternative
  • 2 pinches of salt
  • some pepper
  • some nutmeg
  • 2 tbsp oil for frying

Working time approx. 45 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 20 minutes

Place the pizza dough on a baking sheet lined with baking paper. Wash the ground elder and savoy cabbage leaves, chop the ground elder stems and savoy cabbage ribs very finely, and cut the leaves into 2 cm strips. Finely chop the onions and garlic cloves. Brown the stems, ribs, onions, and garlic in a pan with oil and fry gently for seven minutes. Add the moist ground elder and savoy cabbage leaves, salt, and spices, and fry over low heat for another seven minutes. Once the vegetables are al dente, season again. Spread the vegetable mixture on the pizza dough, cover with sour cream and crumbled feta cheese. Bake the pizza in a preheated oven at 200°C for approximately 15 to 20 minutes. In the meantime, slice the mushrooms thinly, fry them in a pan with oil, and then arrange them on top of the finished pizza as a garnish.
