Ingredients for 3 servings:
- 420 g wheat flour type 550
- 80 g durum wheat semolina
- 12 g sea salt
- 7 g dry yeast or 1/2 cube fresh yeast
- 3 g sugar
- 290 g water, lukewarm
- 2 tbsp olive oil
- 1 leek(s)
- 150 g smoked bacon
- 2 balls of mozzarella (125 g each)
- 150 g Gouda, grated
- 200 g sour cream
- Sea salt and pepper, black
- ½ tbsp butter or margarine
- Durum wheat semolina for rolling out the dough

Pizzas with pork, pancetta and cheese – a recipe for three round pizzas
For the pizza dough, thoroughly mix the flour, durum wheat semolina, and sea salt in a large bowl and make a well in the center of the flour. Mix the yeast with the sugar in a bowl or similar and gradually add the lukewarm water until the yeast is completely dissolved. Add the yeast to the flour in the well and let it rise for a quarter of an hour. Add the olive oil and knead the ingredients thoroughly into a smooth dough. Let the yeast dough rise for at least four hours in a covered bowl in a warm place, such as an oven at 40°C. Then knead the dough well again, divide it into three pieces, shape them into pizzas on durum wheat semolina, and place them on pizza baking sheets. Let the pizza bases rise in the oven at 50°C (top/bottom heat) for at least half an hour. For the topping, wash the leek thoroughly, drain well, and cut into 1/2 cm wide rings. Heat the butter or margarine in a pan, sauté the leeks, and season with sea salt and black pepper. Cut the smoked bacon into thin strips. Drain the mozzarella well and cut into thin slices or small cubes. In a bowl, season the sour cream with salt and pepper and mix well. Spread the sour cream evenly on the three pizzas, leaving a 2 cm border all around. Distribute the mozzarella, leeks, bacon, and finally the grated Gouda evenly on the pizzas. Bake the pizzas one after the other in a preheated pizza oven at 350°C (top/bottom heat) for about 3 to 5 minutes, until the crusts have risen well and the pizza is crispy and brown. In a regular oven at maximum heat, baking will take correspondingly longer.
